  • pork chops 2, boneless, fat scored and seasoned
  • soy sauce 4 tbsp
  • brown sugar 2 tbsp
  • sesame oil 2 tsp
  • dried chilli flakes a pinch
  • star anise 1
  • garlic 1 clove, crushed
  • ginger 1 tbsp of finely grated
  • pak choy 3-4 heads, halved and steamed to serve
  • sesame seeds a pinch, to serve


  • Step 1

    Heat a non-stick frying pan to hot. Use tongs to hold each pork chop, fat-side down, until it has started to render and become crisp and golden.

  • Step 2

    Once the fat is crisp, sear the chops for 3 minutes on each side until golden brown.

  • Step 3

    Mix the rest of the ingredients (except the pak choy and sesame seeds) and pour into the pan.

  • Step 4

    Turn the heat down a little then keep cooking and turning until the chops are glazed and sticky.

  • Step 5

    Serve on top of the steamed pak choy with a sprinkle of sesame seeds.
