  • 2 pork chops
    boneless, fat scored and seasoned
  • 4 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tsp sesame oil
  • a pinch dried chilli flakes
  • 1 star anise
  • 1 clove garlic
    crushed
  • 1 tbsp of finely grated ginger
  • 3-4 heads pak choy
    halved and steamed to serve
  • a pinch sesame seeds
    to serve

Method

  • step 1

    Heat a non-stick frying pan to hot. Use tongs to hold each pork chop, fat-side down, until it has started to render and become crisp and golden.

  • step 2

    Once the fat is crisp, sear the chops for 3 minutes on each side until golden brown.

  • step 3

    Mix the rest of the ingredients (except the pak choy and sesame seeds) and pour into the pan.

  • step 4

    Turn the heat down a little then keep cooking and turning until the chops are glazed and sticky.

  • step 5

    Serve on top of the steamed pak choy with a sprinkle of sesame seeds.
