Ingredients

  • 1 small Romaine or Cos lettuce, leaves torn
  • 1 avocado, cubed
  • 5 baby plum tomatoes, halved
  • t 200g cooked turkey breas, roughly torn  
  • a handful mint leaves, torn 
  • 1 small shallot, finely sliced
  • 1 tsp honey
  • 1 red chilli, seeded and diced 
  • 1 lime, zested and juiced
  • 2 tsp  rapeseed oil

Method

  • STEP 1

    Whisk the dressing ingredients together with some seasoning. Put the lettuce on a serving plate, and add the avocado, tomatoes, turkey and mint. Drizzle over the dressing just before serving.
