Prawn and spinach salad with lime honey dressing

This simple Thai-inspired prawn salad works on its own or as part of a Asian sharing meal. Try diced avocado or papaya instead of mango if you like.



  • dessicated coconut 20g
  • spinach leaves 150g
  • large cooked prawns 150g
  • red onion 1 small, diced
  • mango 1 large, peeled and cubed

lime honey dressing

  • lime juice 3 tbsp
  • honey 1 tbsp
  • mustard 1 tsp
  • grapeseed or sunflower oil 5 tbsp


  • Step 1

    Dry fry the coconut over a medium heat until lightly toasted. Whisk the dressing ingredients together and season.

  • Step 2

    Arrange the spinach, prawns, red onion and mango in a large salad bowl. Sprinkle with the coconut and pour the dressing over just before serving.
