  • 1 tbsp olive oil
  • 1 large onion
    diced
  • 500g sweet potato
    peeled and cut into chunks
  • 300g carrots
    chopped
  • 8cm piece ginger
    finely grated
  • 1.5 litres vegetable stock

Method

  • step 1

    Heat the oil in a large pan and cook the onion, potato and carrots for 10 minutes. Add the ginger and cook for 2 minutes before adding the stock. Bring to the boil and simmer for 20 minutes until the potato and carrots are completely tender.

    Remove from the heat and blend until smooth using a stick blender. Add a little more stock or water if it’s too thick. Taste and season, if it needs it, before serving.
