Diner-style eggs with spiced crisped potatoes

Ingredients
- 3 potatoes, peeled and cut into large cubes
- olive oil
- 4 rashers back bacon, chopped
- a pinch chilli flakes
- 4 spring onions, sliced
- a handful flat-leaf parsley, chopped
- 4 eggs, fried
Method
- STEP 1
Cook the potatoes in boiling salted water until tender then drain really well.
- STEP 2
Heat 1½ tbsp olive oil in a non-stick frying pan, add the potatoes and fry until crisp and golden, then scoop out of the pan.
- STEP 3
Add the bacon and cook until crisp, then add the chilli flakes and spring onions and cook for 2-3 minutes.
- STEP 4
Add back the potatoes and toss until heated through.
- STEP 5
Stir in the parsley and season, then serve a plate of potatoes topped with 2 fried eggs and a pinch more chilli.
