Diner-style eggs with spiced crisped potatoes

Add chorizo or cooked ham to these instead of bacon if that’s what you have around. This recipe is also a great way to use up left over roasties (just skip the first two steps and you're a go)

Ingredients

  • potatoes 3, peeled and cut into large cubes
  • olive oil
  • back bacon 4 rashers, chopped
  • chilli flakes a pinch
  • spring onions 4, sliced
  • flat-leaf parsley a handful, chopped
  • eggs 4, fried

Method

  • Step 1

    Cook the potatoes in boiling salted water until tender then drain really well.

  • Step 2

    Heat 1½ tbsp olive oil in a non-stick frying pan, add the potatoes and fry until crisp and golden, then scoop out of the pan.

  • Step 3

    Add the bacon and cook until crisp, then add the chilli flakes and spring onions and cook for 2-3 minutes.

  • Step 4

    Add back the potatoes and toss until heated through.

  • Step 5

    Stir in the parsley and season, then serve a plate of potatoes topped with 2 fried eggs and a pinch more chilli.
