Chicken curry udon

A good Japanese-style chicken curry. Made with udon noodles and mild curry paste, it's healthy, comforting and easy. Made to share, it's the best midweek meal for two.

  • onion 1, finely chopped
  • chicken breasts 2, cut into pieces
  • mild curry powder or S&B Japanese curry roux
  • cornflour 2 tsp
  • strong chicken stock 300ml
  • green beans 100g, halved and blanched
  • udon noodles 2 portions (either dried or ready to use)


  • Step 1

    Fry the onion in a lit tle oil until it softens, then add the chicken and fry until it cooks through. Add the curry powder (or crumbled block) and cornflour and stir for 1 minute, then stir in the stock and simmer everything together. Stir in the green beans.

  • Step 2

    Cook the udon noodles or rinse ready-cooked noodles in boiling water to warm them up. Divide between two bowls and spoon over the curry.
