
Chicken curry udon

Ingredients
- 1 onion, finely chopped
- 2 chicken breasts, cut into pieces
- mild curry powder or S&B Japanese curry roux
- 2 tsp cornflour
- 300ml strong chicken stock
- 100g green beans, halved and blanched
- 2 portions (either dried or ready to use) udon noodles
Method
- STEP 1
Fry the onion in a lit tle oil until it softens, then add the chicken and fry until it cooks through. Add the curry powder (or crumbled block) and cornflour and stir for 1 minute, then stir in the stock and simmer everything together. Stir in the green beans.
- STEP 2
Cook the udon noodles or rinse ready-cooked noodles in boiling water to warm them up. Divide between two bowls and spoon over the curry.
