Chicken Yakitori Recipe

Yakitori chicken skewers with miso

This Japanese glaze is ideal for grilled meat, poultry or fish. It is so easy to make - the mix of miso, sugar and mirin makes these healthy chicken skewers deliciously sticky.



  • miso paste 4 tbsp
  • sugar 2 tbsp
  • mirin 4 tbsp
  • chicken thigh fillets 250g, cut into 2cm chunks
  • spring onions 3 fat ones, cut into 2cm chunks


  • Step 1

    Soak wooden skewers in water for 15 minutes (or use metal ones). Mix the miso, sugar and mirin until the sugar dissolves. Thread the chicken and onions alternately onto skewers.

  • Step 2

    Brush the skewers with some of the sauce, then grill until cooked through, brushing with more sauce as you go.
