  • 425g tin pitted black cherries in syrup
    drained
  • 1 tbsp (optional) kirsch
  • 1 double chocolate muffin
    sliced
  • 2 small scoops vanilla ice cream
  • 2 small scoops cherry or chocolate ice cream
  • 100ml double cream
    lightly whipped with 1 tbsp icing sugar
  • to serve grated chocolate or chopped toasted almonds

chocolate sauce

  • 2 tbsp golden syrup
  • 100g dark chocolate
    broken into pieces

Method

  • step 1

    To make the chocolate sauce, bring 80ml water to the boil with the golden syrup.
    Remove from the heat and add the broken chocolate, stirring until the sauce is smooth.

  • step 2

    Toss the cherries with the kirsch, if using, and put a few in the base of each serving glass. Top with a slice of muffin, a scoop of each ice cream and some chocolate sauce.
    Repeat the layers, finishing with a spoonful of cream, a cherry and a drizzle of sauce. Sprinkle with grated chocolate and chopped almonds.
