  • 6 rashers streaky bacon
  • 1 tbsp sesame seeds
  • 1 pak choi
    quartered lengthways
  • 100g sugar snap peas
  • 100g baby corn
  • 2 packs (with flavour sachets) instant ramen noodles
  • 1 tbsp soy sauce
  • 1 spring onion
    sliced
  • 1 tbsp sesame oil
  • to serve chilli sauce

Method

  • step 1

    Put the bacon into a wide, deep frying pan and cook, turning, over a medium heat until just starting to crisp. Sprinkle with 1/2 the sesame seeds, flip, then sprinkle with the remaining sesame seeds. Cook until the bacon is really crisp and the sesame seeds have toasted, then remove onto a plate. Tip the pak choi, sugar snap peas and baby corn into the same pan, and toss for 1 minute in the bacon fat. Add the ramen noodles, flavour sachets and recommended amount of water, and simmer according to pack instructions. Then add the soy sauce.

    Divide the noodles, soup and veg between two bowls, then top with spring onions, sesame oil, sesame-crusted bacon and a drizzle of chilli sauce, if you like.
