  • olive oil
  • 2 small red onions, peeled and cut into slim wedges
  • 1 tsp golden caster sugar
  • 2 tbsp balsamic vinegar
  • 150g penne or other short pasta
  • 75g creamy blue cheese such as gorgonzola or dolcelatte, crumbled
  • 1 tbsp pine nuts, toasted


  • STEP 1

    Heat 1 tbsp olive oil in a large non-stick frying pan. Add the onions in a single layer and cook, turning a few times until tender. Sprinkle over the sugar and balsamic then turn up the heat and keep cooking the onions until sticky and caramelised.

  • STEP 2

    Meanwhile, cook the pasta following packet instructions. Drain and toss with the onions and blue cheese then scatter over pine nuts and serve.
