Caramelised red onion and blue cheese pasta

This caramelised red onion and blue cheese pasta is full of bold, comforting flavours to perk you up midweek. Plus, it's super easy and ready in just 30 minutes.



  • olive oil
  • red onions 2 small, peeled and cut into slim wedges
  • golden caster sugar 1 tsp
  • balsamic vinegar 2 tbsp
  • penne or other short pasta 150g
  • creamy blue cheese such as gorgonzola or dolcelatte 75g, crumbled
  • pine nuts 1 tbsp, toasted


  • Step 1

    Heat 1 tbsp olive oil in a large non-stick frying pan. Add the onions in a single layer and cook, turning a few times until tender. Sprinkle over the sugar and balsamic then turn up the heat and keep cooking the onions until sticky and caramelised.

  • Step 2

    Meanwhile, cook the pasta following packet instructions. Drain and toss with the onions and blue cheese then scatter over pine nuts and serve.
