This caramelised red onion and blue cheese pasta is full of bold, comforting flavours to perk you up midweek. Plus, it's super easy and ready in just 30 minutes

  • olive oil
  • red onions 2 small, peeled and cut into slim wedges
  • golden caster sugar 1 tsp
  • balsamic vinegar 2 tbsp
  • penne or other short pasta 150g
  • creamy blue cheese such as gorgonzola or dolcelatte 75g, crumbled
  • pine nuts 1 tbsp, toasted


  • Step 1

    Heat 1 tbsp olive oil in a large non-stick frying pan. Add the onions in a single layer and cook, turning a few times until tender. Sprinkle over the sugar and balsamic then turn up the heat and keep cooking the onions until sticky and caramelised.

  • Step 2

    Meanwhile, cook the pasta following packet instructions. Drain and toss with the onions and blue cheese then scatter over pine nuts and serve.
