- red curry paste 1 tbsp
- small peeled cooked prawns 150g
- limes 2, juiced
- fish sauce 1 tbsp
- palm sugar 2 tsp
- soy sauce 1 tbsp
- pak choy 4 large, quartered
- chives 1 bunch, finely chopped
- peanuts 2 tbsp, chopped
Method

Step 1
Heat a little oil in a frying pan and add the curry paste. Stir-fry for a minute, add the prawns and stir until they’re coated. Add the lime juice, fish sauce, palm sugar and soy sauce, and stir until the sugar has dissolved.

Steam the pak choy for 5 minutes or until it’s tender. Lay it on a plate and spoon over the prawn dressing. Sprinkle on the chives and peanuts to serve.
