Pak choi with Thai prawn dressing

Best quick healthy dish for two. Made with steamed pak choy and a simple sauce of stir-fried prawns and red curry paste. Spicy, easy and delicious.

Ingredients

  • oil
  • red curry paste 1 tbsp
  • small peeled cooked prawns 150g
  • limes 2, juiced
  • fish sauce 1 tbsp
  • palm sugar 2 tsp
  • soy sauce 1 tbsp
  • pak choy 4 large, quartered
  • chives 1 bunch, finely chopped
  • peanuts 2 tbsp, chopped

Method

  • Step 1

    Heat a little oil in a frying pan and add the curry paste. Stir-fry for a minute, add the prawns and stir until they’re coated. Add the lime juice, fish sauce, palm sugar and soy sauce, and stir until the sugar has dissolved.

  • Step 2

    Steam the pak choy for 5 minutes or until it’s tender. Lay it on a plate and spoon over the prawn dressing. Sprinkle on the chives and peanuts to serve.
