Fried egg pilaf

A quick-fix-recipe if you're in a rush mid-week and need something on the table in 30 minutes. This flavoursome pilaf features flaked almonds, radicchio, orange and dill.



  • onion 1, finely sliced
  • olive oil
  • garlic 1 clove, crushed
  • flaked almonds 2 tbsp
  • raddichio ½, finely sliced
  • cooked rice 250g
  • orange 1, zested and juiced
  • dill chopped to make 1 tbsp
  • eggs 2
  • butter


  • Step 1

    Fry the onion in a little oil until soft, tip in the garlic and almonds and fry until the almonds brown a little then add the radicchio and fry until wilted.

    Add the rice and stir it until it is thoroughly heated through. Add the orange zest and dill and a little orange juice and season well.

    Heat a knob of butter in a frying pan and fry the eggs, divide the rice between two bowls and slide an egg into each.
