Cocktail jellies with summer berries

Vodka, cranberry juice and orange liqueur make up this low fat jelly decorated with whichever summer berries you fancy. This refreshing desert is strictly for grown ups.



  • gelatine 3 leaves
  • cranberry juice 300ml
  • golden caster sugar 75g
  • vodka 100ml
  • orange liqueur 100ml
  • limes 4
  • summer berries to decorate


  • Step 1

    Soak 3 gelatine leaves in cold water for 5 minutes until softened, then squeeze out any excess water.

    Put 150ml cranberry juice into a pan with 75g golden caster sugar and heat gently until the sugar has just dissolved.

    Take off the heat and stir in the gelatine until dissolved.

  • Step 2

    Pour another 150ml cranberry juice, 100ml vodka, 100ml orange liqueur and the juice of 4 limes into a large jug.

    Strain the cranberry and gelatine mixture into the jug and stir. Divide between 4 martini glasses and chill overnight.

    Decorate with a mixture of summer berries and serve.
