  • 6 pork sausages
  • for frying oil
  • 4 rashers smoked streaky bacon
    chopped
  • 1 small onion
    diced
  • 1 small carrot
    diced
  • 400g tin haricot beans
    drained
  • 1 tbsp English mustard
  • 1 tbsp soft light brown sugar
  • 1 tbsp tomato purée
  • 200ml chicken stock
  • a handful flat-leaf parsley
    chopped

Method

  • step 1

    Heat the oven to 200C/fan 180C/gas 6. Fry the sausages in a little oil in a casserole until browned all over. Remove the sausages, then add the bacon, onion and carrot, and cook for 7 minutes or until everything is starting to brown and the bacon is crisping up.

  • step 2

    Add the remaining ingredients, except the parsley, season and stir well. Return the sausages to the casserole, then cover and bake for 30 minutes. Stir in the parsley, to serve.
