Detox green soup

This is a great vegetarian soup that couldn't be healthier (less than 100 calories) and is a perfect way to use up one of those bags of mixed salad leaves that are always lurking at the back of the fridge. Serve this warming soup with crusty bread for a heartier meal.



  • spring onions ½ bunch, chopped
  • olive oil
  • potato 1, peeled and diced
  • vegetable stock 500ml
  • watercress, spinach and rocket 140g bag


  • Step 1

    Cook the spring onions in ½ tbsp olive oil until softened. Add the potato and cook for 2 minutes then tip in the stock, season well and simmer until potato is tender. 

  • Step 2

    Add the leaves, simmer for a minute then whizz until smooth with a blender or in a liquidiser.
