We’ve got the Americans to thank for lobster rolls. Our favourite rolls are at Fraq’s Loster Shack and Hawksmoor, but now that Ocado sells frozen lobster tails they’re very easy to make yourself at home. Other supermarkets sell smaller, Canadian lobsters, which you can also use in this recipe.

  • 1 cooked lobster tail or small cooked Canadian lobster
  • 1/2 stalk celery
    finely diced
  • 1 tbsp mayonnaise
  • a good squeeze lemon juice
  • 2 tsp of snipped chives
  • 3 soft finger rolls or hot dog rolls
    to serve
  • soft butter
  • shredded romaine or little gem
    to serve
  • a pinch (optional) cayenne

Method

  • step 1

    Extract the meat from the lobster and cut into bite-sized pieces. Mix with the celery, mayo, lemon and chives and season well.

  • step 2

    Split the buns down the centre but not all the way through. Spread the outside side edges of the rolls with butter then fry on both sides in a hot pan until golden.

  • step 3

    Fill the rolls with a little shredded lettuce and the lobster mix and sprinkle with a little cayenne, if you like.
