Ingredients

  • plain flour 200g
  • easy bake/fast action yeast 1 tsp
  • caster sugar 1 tsp
  • egg 1
  • whole milk 250ml, heated to lukewarm

TO SERVE

  • butter
  • strawberry jam
  • clotted cream

Method

  • Step 1

    Put the flour, yeast and sugar in a bowl and stir together. Whisk the egg and milk together, then gradually whisk into the flour mix to make a batter. Cover with a teatowel and leave for 1½ hours.

  • Step 2

    Heat a non-stick frying pan and brush with a little oil.

  • Step 3

    Uncover the batter and whisk in 1 tsp of salt. Working in batches, drop large spoonfuls of batter into the heated pan. Cook for 3-4 mins until small bubbles appear on the surface, then flip and cook the other side for another couple of minutes. Serve with butter or jam and cream.
