Broad beans with mozzarella, lemon and mint

This recipe for broad beans with mozzarella, lemon and mint is a simple, fresh and zingy salad that makes an ideal starter to share. Broad beans are at their best during the summer months.





  • broad beans 2 handfuls (about 100g), fresh or frozen
  • lemon 1, zested and juiced
  • mozzarella 1 ball, a buffalo mozzarella will have a superior flavour
  • olive oil
  • mint leaves 2 handfuls, chopped


  • Step 1

    Simmer the broad beans for 4 minutes, drain, cool and peel off the grey skins. Mix with the lemon zest, juice and mint and add a good slug of oil. Season. Put the mozzarella in the centre of a plate, spoon the beans around and drizzle some of the dressing over the cheese.
