Mango and pineapple sorbet

A sorbet is one of the easiest iced desserts to make and this recipe couldn't be simpler. Just make a lime sugar syrup, whizz with the mango and pineapple in a food processor and freeze until ready to eat. It may be easy to make, but the results are something special!



  • caster sugar 250g
  • limes 3, finely grated zest of 1 and juice of 3
  • pineapple 1, cored and cut into chunks
  • mangos 2, peeled and cut into chunks


  • Step 1

    Bring the caster sugar, lime zest and lime juice to a boil with 200ml water. Simmer for 5 minutes, skim and cool. 

  • Step 2

    Whizz the fruit with the lime syrup in a food processor until smooth. Freeze for 3-4 hours until firm.
