This smoky sweet potato soup is a quick and easy winter warmer. Make a batch for the family or eat some now and freeze the rest for later

  • butter
  • onion 1, roughly chopped
  • hot smoked paprika 1 tsp
  • ground coriander 1 tsp
  • garlic 2 cloves, crushed
  • sweet potato 750g, peeled and cut into chunks
  • vegetable stock 1 litre
  • gruyère cheese or veggie alternative ) 75g, grated


  • Step 1

    Melt a knob of butter in a large pan, add the onion, paprika, coriander and garlic and cook for about 8 minutes until softened.Add the sweet potato and cook for a few more minutes.Add the stock, bring to the boil then simmer, covered, for 10 minutes, or until the veg is soft.

  • Step 2

    Whizz in a blender or with a stick blender to a smooth soup. Season and serve with a sprinkling of cheese and an extra pinch of paprika, if you like.
