  • 25g butter
  • 6 spring onions
    roughly chopped
  • 500g frozen petit pois
  • 600ml strong vegetable or chicken stock
  • 300g thick-cut ham
    chopped

Method

  • step 1

    Melt the butter in a pan and cook the spring onions for 5 minutes until softened. Add the peas and stock, bring back to a simmer then cook for 3 minutes. Stir in a small handful of the chopped ham, simmer for 2 minutes then take off the heat and use a hand blender to whizz everything together. Season, stir in the rest of the ham then serve.
