  • 2 ripe (160g) bananas
    peeled and chopped
  • 180g plain soya yogurt
  • 1 tbsp maple syrup
  • 100g dark chocolate
    chopped
  • 20g salted peanuts
    finely chopped

Method

  • step 1

    Whizz the bananas, yogurt and maple syrup in a blender until completely smooth. Divide the mixture between four ice lolly moulds (each 100ml capacity). If you have a mould that allows you to add sticks at this stage, add now. Otherwise, transfer to the freezer for 1 hour until slightly firm, then gently push the sticks into each one and transfer back to the freezer for at least 5 hours or overnight until completely solid.

    When the lollies are solid, put the chocolate in a heatproof bowl and heat in the microwave in 15-second blasts, checking and stirring each time until completely melted. Set aside to cool.

  • step 3

    Hold each lolly over a sheet of baking paper and drizzle with the chocolate, turning the lolly as you go, then quickly sprinkle with the nuts as the chocolate will take no time to set. Serve immediately.
