  • 100g self-raising flour
  • 1 tsp bicarbonate of soda
  • ½ tsp vanilla bean paste
  • 1 egg
  • 150ml whole milk
  • 5 ripe bananas
    peeled
  • flavourless oil
    for deep-frying
  • a dusting icing sugar
    to serve

Method

  • step 1

    In a large bowl, whisk together the self-raising flour, bicarbonate of soda, vanilla bean paste and a pinch of salt. Crack in the egg and pour in the whole milk. Whisk to a smooth, thick batter. Cut the bananas into four diagonal pieces each.

    Fill a pan no more than a third full with flavourless oil and heat to 180C, or until a cube of bread browns in 30 seconds. Dip each of the banana pieces into the batter, making sure they’re fully covered, then carefully lower into the oil. Fry, in batches, for 2 minutes until deeply golden. Drain on kitchen paper and dust with icing sugar to serve.
