Olive Oil Cookies with Dark Chocolate

Olive oil gives a crisp, crunchy texture to these dark chocolate cookies, while a sprinkle of sea salt adds a sophisticated savoury edge

  • 70% dark chocolate 150g, chopped into chunks
  • olive oil 100ml
  • light muscovado sugar 50g
  • golden caster sugar 85g
  • egg 1, beaten
  • plain flour 200g
  • bicarbonate of soda 1 tsp
  • sea salt flakes


  • Step 1

    Put 100g of the chocolate in a bowl and melt either over a pan of simmering water or in short blasts in the microwave.

  • Step 2

    Beat the oil, sugars and egg until smooth, then stir in the melted chocolate. Stir in the remaining chocolate chunks, then the flour and bicarbonate of soda. Roll into 16 equal-sized balls.

  • Step 3

    Put on 2 non-stick baking sheets, well spaced apart, and press down to flatten a little. Bake for 18-20 minutes at 180C/fan 160C/gas 4 or until firm and cracked on the surface. Sprinkle with a little sea salt as soon as they come out of the oven.
