  • 150g 70% dark chocolate
    chopped into chunks
  • 100ml olive oil
  • 50g light muscovado sugar
  • 85g golden caster sugar
  • 1 egg
    beaten
  • 200g plain flour
  • 1 tsp bicarbonate of soda
  • sea salt flakes

Method

  • step 1

    Put 100g of the chocolate in a bowl and melt either over a pan of simmering water or in short blasts in the microwave.

  • step 2

    Beat the oil, sugars and egg until smooth, then stir in the melted chocolate. Stir in the remaining chocolate chunks, then the flour and bicarbonate of soda. Roll into 16 equal-sized balls.

  • step 3

    Put on 2 non-stick baking sheets, well spaced apart, and press down to flatten a little. Bake for 18-20 minutes at 180C/fan 160C/gas 4 or until firm and cracked on the surface. Sprinkle with a little sea salt as soon as they come out of the oven.
