Chocolate chunk pecan cookies

Chunky, nutty and oh-so-moreish, these chocolate pecan cookies are the perfect after dinner treat or edible gift. Just make sure you reach for them quick, they won't be around long...

  • dark chocolate 200g, broken into chunks
  • butter  100g, chopped 
  • light muscovado sugar 50g 
  • golden caster sugar 85g 
  • vanilla extract 1 tsp 
  • egg 1, beaten
  • pecans 100g
  • plain flour 100g
  • bicarbonate of soda 1 tsp


  • Step 1

    Melt 85g of the chocolate, then beat in the butter, sugars, vanilla and egg until smooth. Stir in most of the remaining chocolate and nuts, then the flour and bicarbonate of soda.

  • Step 2

    Heap 12 spoonfuls, spaced apart, on baking sheets, then poke in the last nuts and chocolate chunks. Bake for 12 mins at 180C/fan 160C/gas 4 until firm.
