What is tofu?

Tofu, also known as bean curd, is made from curdling fresh soya milk, which is then pressed into a solid block in a process that’s similar to cheesemaking. It originates in China, but is popular across Asia. Mildly flavoured, tofu has grown in popularity as a meat substitute all over the world in recent decades and is most commonly seen in two forms: firm and silken. The latter is very soft and silky while the former is firm and bouncy.
