Ingredients

  • 4 spring onions, chopped
  • 2 sticks celery, sliced on the diagonal
  • 2 green apples, diced
  • 2 tbsp golden sultanas
  • 400g tin chickpeas, rinsed and drained
  • ½ a bunch coriander, chopped
  • 2 Little Gems, leaves separated

DRESSING

  • 2 tsp curry paste (any Indian one will work)
  • 2 tbsp mango chutney, chopped if chunky
  • 3 tbsp greek yogurt
  • 1 lime, juiced

Method

  • STEP 1

    Mix together the dressing ingredients until well combined.

  • STEP 2

    Add to the rest of the salad ingredients, except the lettuce leaves (and reserve some coriander for garnishing), and toss with some seasoning. Arrange the lettuce leaves on a plate and pile the salad on top. Finish by sprinkling over the rest of the coriander.
