Coronation chickpea and apple salad

Ingredients
- 4 spring onions, chopped
- 2 sticks celery, sliced on the diagonal
- 2 green apples, diced
- 2 tbsp golden sultanas
- 400g tin chickpeas, rinsed and drained
- ½ a bunch coriander, chopped
- 2 Little Gems, leaves separated
DRESSING
- 2 tsp curry paste (any Indian one will work)
- 2 tbsp mango chutney, chopped if chunky
- 3 tbsp greek yogurt
- 1 lime, juiced
Method
- STEP 1
Mix together the dressing ingredients until well combined.
- STEP 2
Add to the rest of the salad ingredients, except the lettuce leaves (and reserve some coriander for garnishing), and toss with some seasoning. Arrange the lettuce leaves on a plate and pile the salad on top. Finish by sprinkling over the rest of the coriander.
