Avocado tzatziki

Ingredients

  • cucumber ½, diced into ½cm cubes
  • olive oil 20ml
  • garlic 1 clove, crushed
  • lemon juice 2 tbsp
  • greek yogurt 150g
  • chilli powder ⅓ tsp
  • black pepper a pinch
  • avocado 1, cut into ½ cm cubes
  • mint 3 sprigs, leaves removed and chopped
  • warm pitta breads , to serve

Method

  • Step 1

    Put the cucumber in a large colander and sprinkle with ¼ tsp of salt. Leave to drain for 20 minutes.

  • Step 2

    Meanwhile, in a large bowl, add the remaining ingredients 1 – except the avocado, cucumber and mint – plus ¼ tsp of salt. Stir the ingredients well to combine.

  • Step 3

    Add the avocado and drained cucumber. Mix well, gently squashing the avocado into the mixture. Add the mint and mix again. This avocado tzatziki can be prepared a day ahead and eaten chilled with grilled pitta breads.
