  • 3 egg yolks
  • 50g caster sugar
  • 700ml single cream, plus extra cinnamon for sprinkling
  • 1 tsp vanilla extract
  • a generous pinch, plus extra to serve ground nutmeg or cinnamon
  • to serve whipped cream and cinnamon sticks


  • STEP 1

    Whisk together the eggs and sugar in a jug or bowl. Heat the cream in a pan and add the vanilla and nutmeg. Cook gently over a medium-low heat and bring the mixture to just below the boil.

  • STEP 2

    Pour the cream over the egg and sugar mixture, and whisk really well. Pour back into the pan over a low heat and cook, stirring constantly, until thickened slightly.

  • STEP 3

    Remove from the heat. Pour into mugs or tumblers, dust with ground cinnamon and top with whipped cream. Garnish with a cinnamon stick to serve.
