You can replace the ground turmeric with 1 tsp of finely grated fresh turmeric – wear gloves when preparing to avoid staining your fingers.

  • 100g porridge oats
  • 40g chia seeds
  • 1 tbsp ground turmeric
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp ground black pepper
  • ¼ tsp ground cardamom
  • 400ml nut milk (we used almond)
  • 60g dairy-free coconut yogurt
    plus extra to serve
  • 1 tbsp maple syrup
    plus extra to drizzle
  • 2 Golden Delicious apples
    1 cored and grated with the peel left on, 1 cut into batons
  • 10g toasted coconut flakes
  • 2 tbsp pomegranate seeds
    (optional)

Method

  • step 1

    Combine the oats, chia seeds and spices in a large bowl. Stir in the milk, yogurt, grated apple and maple syrup, and leave for at least 1 hr or overnight.

  • step 2

    Serve topped with extra yogurt, a scattering of coconut flakes, the apple batons, a drizzle of maple syrup and some pomegranate seeds, if you like.
