Sprouts with walnuts and pancetta

If you are searching for a way to make your Brussels sprouts more interesting, then try this simple method of steaming the sprouts and mixing with toasted walnuts and crispy pancetta. And don’t save your Brussels for Christmas dinner – they go brilliantly with any roast year round.



  • sprouts 500g, trimmed
  • cubetti di pancetta or bacon lardons 75g
  • butter 50g
  • walnut halves a handful, snapped in two


  • Step 1

    Steam the sprouts until tender but still bright green. Cook the pancetta in the butter until crisp and golden. Add the walnuts and cook until golden and toasted. Add the sprouts and toss everything together.
