Spiced stuffing

This can be prepared the day before.



  • onion 1 large, grated
  • dried chilli flakes a good pinch
  • fennel seeds 2 tsp, toasted and crushed slightly
  • oil for frying
  • apple 1, grated
  • fresh breadcrumbs 100g
  • herby pork sausages 6, skins removed


  • Step 1

    Heat the oven to 200c/fan 180c/gas 6. Fry the onion, chilli and fennel in a little oil until the onion is softened.

  • Step 2

    Cool a little, then mix with the apple, breadcrumbs and sausagemeat. Season well, pile into an ovenproof dish and rough up the surface with the back of a fork.

  • Step 3

    Cook for 40 minutes until the top is golden brown and crusty.
