Mint sauce

Use up mint from the garden in this classic mint sauce – it's essential for roast lamb and only takes five minutes to make

  • caster sugar 1 tsp
  • Dijon mustard 1 tsp
  • red wine vinegar 3 tbsp
  • mint a small bunch, finely chopped


  • Step 1

    Mix together the sugar, mustard, vinegar, a pinch of salt and black pepper in a bowl. Pour in 3 tbsp of just-boiled water and stir until well combined. Stir in the chopped mint and mix again, adding more salt or vinegar to taste. This will keep in a jar in the fridge for a week.
