Ingredients
- cardamom pods 1 tsp
- fenugreek seeds 1 tsp
- dried red chillies 2
- coriander seeds 1 tsp
- cumin seeds 1 tsp
- cayenne pepper 1 tsp
- ground ginger ½ tsp
- sweet smoked paprika 2 tbsp
- paprika (not smoked) 1 tbsp
- garlic granules 2 tsp
Method

Step 1
Put the whole spices in a small pan and heat until fragrant, stirring so they don’t burn. Cool, then grind with a spice grinder or pestle and mortar. Stir in remaining spices and store in an airtight jar.
Kept in a small airtight jar, these spice blends will last for 2 months.
