  • 200g long-stemmed broccoli
    cut into 4cm pieces
  • 3 nests (190g) medium egg noodles
  • 2 sirloin steaks
    fat trimmed, oiled and well seasoned
  • 6 spring onions
    chopped, plus extra to serve
  • a thumb-sized piece ginger
    grated
  • for frying groundnut oil
  • 3 tbsp crunchy peanut butter
  • 200ml coconut milk
  • 2 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 1-2 tbsp sriracha or other Asian chilli sauce
    depending on how hot you like it
  • 1 red chill
    finely chopped

Method

  • step 1

    Cook the broccoli in a pan of boiling salted water for 2 minutes. Scoop out with a slotted spoon then add the noodles to the same water and simmer until just-cooked. Drain.

  • step 2

    Heat a heavy-based frying pan to very hot then sear the steaks for 2 minutes on each side. Rest under foil while you finish the sauce.

  • step 3

    Put the spring onions, ginger and 1 tbsp of oil in a wok, and cook until softened. Add the peanut butter, coconut milk, soy sauce, sesame oil, sriracha and enough water to make it saucy, then stir until smooth and bubbling.

  • step 4

    Tip in the noodles and toss, then slice the steak and add that plus any resting juices along with the broccoli. Keep tossing until everything is heated through. Sprinkle with red chilli and more spring onions, if you like.
