Tomato and basil stew

This tomato stew is the best vegetarian main when you want something fast and healthy to serve with rice. Ready quickly in 30 minutes, serve it with a big bowl of basmati rice

Ingredients

  • ripe cherry tomatoes or small tomatoes 200g, half of them halved
  • olive oil
  • garlic 1 clove, crushed
  • smoked paprika a good pinch
  • sugar a pinch
  • basil a large handful of leaves
  • Greek yoghurt 1 tbsp
  • basmati rice cooked to serve

Method

  • Step 1

    Put the tomatoes in a small pan and add a good slug of olive oil. Add the garlic, paprika and sugar and heat slowly. Cook until the tomatoes begin to pop, then add the basil, stir once and season. Add the yoghurt to the top of the stew and serve with the rice.
