  • 75ml pineapple juice
  • 50ml coconut cream
  • 1 lime
    juiced
  • 3 tbsp apple juice
  • 1 tsp sugar syrup
    (gomme)
  • a dash of almond extract
  • pineapple wedge
    to garnish

Method

  • step 1

    Put all of the ingredients (except the pineapple garnish) and a small handful of ice in a blender and blitz until smooth. Don’t add too much ice or it will make the drink too watery. Pour into a piña colada or hurricane cocktail glass, with more ice if you like, and garnish with the pineapple wedge.
