Our take on the ever-popular banana loaf. Made with pecans and a tropical passion fruit frosting, this is a teatime treat to share with family and friends

Ingredients

  • butter 75g, softened
  • soft brown sugar 110g
  • plain flour 125g
  • wholemeal flour 75g
  • baking powder 2 tsp
  • eggs 2
  • very ripe bananas 4, mashed
  • pecans 75g, each snapped in half

frosting

  • butter 75g
  • cream cheese 75g
  • icing sugar 150g
  • passion fruit 3, halved and seeds and pulp scooped out

Method

  • Step 1

    Heat the oven to 180C/fan 160C/gas 4. Beat the butter, sugar, flours, baking powder, eggs and banana together.

  • Step 2

    Stir in the nuts and spoon into a lined and buttered 450g loaf tin. Bake for 1¼ – 1½ hours or until a skewer comes out clean. Cool for 10 minutes in the tin then lift out and cool on a rack.

  • Step 3

    To make the frosting beat the butter until soft, beat in the cream cheese and then the sugar and 2 tbsp passion fruit juice. Frost the loaf and drizzle over the remaining juice, leave seeds in if you like or sieve them out.
