Banana loaf with passion fruit frosting

Ingredients
- 75g butter, softened
- 110g soft brown sugar
- 125g plain flour
- 75g wholemeal flour
- 2 tsp baking powder
- 2 eggs
- 4 very ripe bananas, mashed
- 75g pecans, each snapped in half

- 75g butter
- 75g cream cheese
- 150g icing sugar
- 3 passion fruit, halved and seeds and pulp scooped out
Method
- STEP 1
Heat the oven to 180C/fan 160C/gas 4. Beat the butter, sugar, flours, baking powder, eggs and banana together.
- STEP 2
Stir in the nuts and spoon into a lined and buttered 450g loaf tin. Bake for 1¼ - 1½ hours or until a skewer comes out clean. Cool for 10 minutes in the tin then lift out and cool on a rack.
- STEP 3
To make the frosting beat the butter until soft, beat in the cream cheese and then the sugar and 2 tbsp passion fruit juice. Frost the loaf and drizzle over the remaining juice, leave seeds in if you like or sieve them out.
