Celebrate the weekend with this beautiful marriage of pancakes and Full English breakfast. Perfect for sharing over a campfire, you can expect fried eggs, sausages, mushrooms, bacon and chilli jam

  • self-raising flour 150g
  • baking powder ½ tsp
  • milk 200ml
  • eggs 3
  • chives ½ a small bunch, finely chopped
  • sausages 2
  • vine tomato 1, halved
  • portobellini mushrooms 4
  • olive oil a drizzle, plus extra for frying
  • streaky bacon 4 rashers
  • soft cheese 2 tbsp
  • chilli or bacon jam to serve


  • Step 1

    Whisk the flour, baking powder and a pinch of salt in a large bowl until well mixed. Add the milk and crack in one of the eggs. Whisk until smooth, then fold in half the chives.

  • Step 2

    Heat the grill to medium-high. Put the sausages, tomato halves and mushrooms under the grill. Season the mushrooms and tomatoes, and drizzle with a little oil. Cook for 10-15 minutes, turning a couple of times, adding the bacon after 5 minutes. Grill until the sausages and bacon are golden and cooked through, and the tomato and mushrooms are tender. Remove from the grill when done.

  • Step 3

    Meanwhile, heat a little oil in a non-stick frying pan and fry spoonfuls of batter until golden. Flip and cook for another few minutes until golden on both sides. Poach the other two eggs.

  • Step 4

    Serve the pancakes stacked with the soft cheese, a poached egg, sausage, bacon, mushrooms and tomato. Scatter with the remaining chives and a dollop of bacon or chilli jam.
