  • 250ml mayonnaise
  • 2 garlic cloves, crushed
  • 2 tbsp chopped chives
  • 1-2 tsp chipotle paste
  • 1 lime, juice only
  • vegetables for crudités (you could use fennel, carrots, courgettes with flowers, radishes, celery with leaves or cooked green beans, fresh peas, radicchio leaves and asparagus)


  • STEP 1

    Mix the mayonnaise, garlic, chives and chipotle paste together. Season, then add just enough lime juice to balance the flavour. Spoon into a serving bowl or several smaller bowls.

  • STEP 2

    Trim the vegetables to serve as crudités and arrange on a platter around the bowl or bowls of aïoli.
