Gnocchi Bake with Broccoli and Cheese

Baked gnocchi with broccoli, blue cheese and walnuts

Make this creamy vegetarian bake for an easy family midweek meal. Blue cheese is lovely in this, but you can adapt it to suit cheeseboard leftovers if you like

Ingredients

  • gnocchi 500g
  • tenderstem broccoli 200g
  • dolcelatte or creamy blue cheese 150g, crumbled
  • single cream 150ml pot

Method

  • Step 1

    Heat the oven to 190C/fan 170C/gas 5. Heat a large pan of salted water to boiling. Cook the gnocchi following pack instructions then scoop out and drain. Cook the broccoli in the same water until just tender then drain.

  • Step 2

    Put the gnocchi, broccoli, cheese and cream in a bowl. Season well and stir together then tip into a buttered ovenproof dish. Bake for 15-20 minutes until golden and bubbling. Serve with salad.
