Iced Tea Recipe with Mint

Iced mint and apple tea

This refreshing summer cocktail of apple (and brandy) infused iced tea is easy to make and perfect for a balmy summer evening. Makes enough to share with friends



  • tea bags 2
  • golden caster suga r 1 tbsp
  • apples 2, cored and chopped
  • brandy 2 tbsp
  • soda water 600ml
  • mint a small handful of leaves


  • Step 1

    Put the tea bags into a jug and pour in 300ml boiling water. Steep for 1 minute, then remove the tea bags. Stir in the sugar and apples. Cover and leave to cool, then put in the fridge for 4 hours or overnight. Strain the tea, discarding the apples and stir in the brandy. Pour into glasses and add the mint and some ice. Top up with soda water.
