Butter bean soup

This warm and welcoming butter bean soup is perfect for a quick and easy lunch time meal. Sup a cup of this delicious soup with thick crusty bread on the side for dunking.



  • onions 2, peeled and chopped
  • butter a knob
  • butter beans 2 x 400g cans
  • thyme a handful of leaves
  • chicken stock  750ml
  • pancetta 8 slices
  • chives snipped


  • Step 1

    Fry the chopped onions in a knob of butter until soft. Drain the cans of butter beans, then add to the onions with some thyme leaves and the chicken stock. Simmer for 10 minutes.

    Fry the pancetta until crisp. Blitz the soup and serve topped with the pancetta and snipped chives.
