Brandy butter

Ingredients
- 100g salted butter, softened
- 75g icing sugar
- 2 tbsp brandy
Method
- STEP 1
Put the butter and icing sugar in a bowl and beat with an electric whisk until pale and lightly whipped.
- STEP 2
Briefly whisk in the brandy until just combined. Taste and add a splash more brandy if you prefer a stronger flavour. If the butter splits when adding the brandy, add 1-2 tbsp more icing sugar to bring the mixture back together. Chill until ready to serve.
