Ingredients
- 600g chicken thigh fillets, quartered
- 1 large onion, finely chopped
- 2 cloves garlic, crushed
- 2cm piece ginger, finely chopped
- 2 green chillies, finely chopped
- 400ml tin coconut milk
- 1 tbsp tomato purée
- 2 tsp cumin seeds
- 2 tsp ground coriander
- 1 tsp mild chilli powder
- ½ tsp smoked paprika
- 2 tsp ground turmeric
- coriander, a handful of leaves, chopped
- cooked rice, to serve
- roti or naans, to serve
Method
- STEP 1
Heat the slow cooker to high. Put all the ingredients except the coriander, rice and breads in the slow cooker. Stir well, then put on a lid and cook for 4 hours. Season, stir in the coriander and serve with rice and breads.
