  • 125g self-raising flour
  • 2 tsp baking powder
  • 125g cheddar cheese
    grated
  • 1 egg
    beaten
  • enough to make the beaten egg up to 250ml milk
  • oil
  • 60g butter
  • 1 tbsp Marmite

Method

  • step 1

    Heat the oven to 200c/fan 180c/gas 6. Butter an 8-hole muffin tray and dust with flour, or use muffin cases.

  • step 2

    Sieve the flour and baking powder into a bowl. Add the cheese, egg, milk mixture and 60ml oil. Stir until all the ingredients are mixed (you don’t have to be too thorough and don’t worry if the mixture looks sloppy).

  • step 3

    Divide the mixture between the cases or tin and bake for 18-20 minutes until light brown.

  • step 4

    Melt the butter with the marmite. When the muffins are cooked, remove from the oven and spoon over the butter mix. You can also insert a few skewer holes into the top of the muffins so that the mix seeps further in.
