Rainbow slaw with creamy lime and coriander dressing

The best recipe for homemade coleslaw. With cabbage, carrots and a creamy lime and coriander dressing, this side dish goes well with bbq meats or roast chicken.



  • mayonnaise 150ml
  • lime 1, zested and juiced
  • cider vinegar 1 tbsp
  • green chilli 1 small, seeded and diced
  • golden caster sugar 1 tbsp


  • red cabbage 75g, very thinly sliced
  • white cabbage 75g, very thinly sliced
  • carrots 2, julienned
  • red onion 1 large, diced
  • celery 4 stalks, sliced
  • radishes 5, thinly sliced
  • coriander a large handful, chopped


  • Step 1

    For the dressing, mix the mayonnaise, lime, vinegar, chilli and sugar in a small bowl with a whisk. Season.

  • Step 2

    Chop the veg and pour over the dressing. Mix and chill until needed.
