
Healthy chicken Caesar salad

Ingredients
- 2 slices ciabatta, cut into chunks
- olive oil
- salt flakes
- 4 tbsp half-fat crème fraîche
- 1 tsp Dijon mustard
- ½ tsp Worcestershire sauce
DRESSING
- ½ clove garlic, crushed
- 30g parmesan, finely grated plus a few shavings
- ½ lemon, juiced
- 1 cooked skinless chicken breast, sliced
- 2 little gem lettuce, leaves separated and torn if large
- 2 spring onions, shredded
Method
- STEP 1
Heat the oven to 200c/fan 180c/gas 6. Toss the bread with 1 tbsp olive oil and some salt flakes. Bake for 10-15 minutes until golden.
- STEP 2
Mix the crème fraîche, dijon, worcestershire sauce, garlic and parmesan with a squeeze of lemon juice and a splash of water. Season.
- STEP 3
Toss the lettuce with ½ the dressing and divide between 2 plates. Top with chicken, croutons and spring onions. Drizzle over the rest of the dressing. Shave over a little parmesan to finish.
