Ingredients
- onion 1, finely chopped
- garlic 1 clove, crushed
- smoked bacon lardons 100g
- olive oil
- parsnips 2, finely diced
- thyme sprigs 2
- chilli flakes a pinch
- chicken stock 1 litre
- brussels sprouts 250g, finely sliced
- chilli oil (optional) to serve
Method

Step 1
Put the onions, garlic and lardons in a large pan, drizzle with a little oil and cook for 5 minutes. Add the parsnips, thyme, chilli flakes and stock, bring to the boil, then simmer for 15 minutes. Add the sprouts then simmer for another 5 minutes before serving with a drizzle of chilli oil if you like.
