This bacon, brussels and chilli broth is a great, healthy way to warm up winter and use up any leftovers you might have. Even sprout-haters will love it

Ingredients

  • onion 1, finely chopped
  • garlic 1 clove, crushed
  • smoked bacon lardons 100g
  • olive oil
  • parsnips 2, finely diced
  • thyme sprigs 2
  • chilli flakes a pinch
  • chicken stock 1 litre
  • brussels sprouts 250g, finely sliced
  • chilli oil (optional) to serve

Method

  • Step 1

    Put the onions, garlic and lardons in a large pan, drizzle with a little oil and cook for 5 minutes. Add the parsnips, thyme, chilli flakes and stock, bring to the boil, then simmer for 15 minutes. Add the sprouts then simmer for another 5 minutes before serving with a drizzle of chilli oil if you like.
