Ingredients
- 500g Jersey Royal potatoes, cleaned
- 1 sprig rosemary, finely chopped
- 2 cloves garlic, bashed
- 2 tbsp olive oil
- rocket, to serve
CRAB SALSA
- ½ round shallot, finely chopped
- 1 red chilli, finely chopped
- 100g white crab meat
- 2 tbsp extra-virgin olive oil
- ½ lime, juiced
- ½ small bunch coriander, finely chopped
- sea salt flakes, to taste
Method
- STEP 1
Heat the oven to 200C/fan 180C/gas 6. Toss together the potatoes, rosemary, garlic and olive oil in a small roasting tin with some seasoning. Roast for 50 minutes-1 hour or until golden-tinged, the skins are lightly wrinkled and tender when pressed.
- STEP 2
Stir together the salsa ingredients and season. Add a little more oil or lime juice, if you like. Season the potatoes with a little sea salt, and spoon over the salsa in the tin. Serve with a rocket salad in the side of the tin to toss through the tray at the table.
